I heard someone talking about panj shabad. What are the panj shabad?
"Panj Shabad"- No such terminology exists as per Gurmat or Sikh traditions. It is possible, that some Dera has invented this and so has come to you. However "panj baani" of nitnem of course forms part of Sikh Traditions. Thanks.

Jot in gurdwara has no religious significance. But people can often be seen doing fake rituals around jots. This is against gurmat.
Thanks.

Since he is “Karta Purakh.” He himself is the creator and resides in his creation.
The entire Creation, living or non-living, is His creation.
It is against Gurbani to limit his shape to that of man.

is jhatka meat allowed to all sikhs or only to nihamg sikhs?
One rule applies to all. Meat-eating or non-eating is a personal preference. It has nothing to do with religion. Meat-eating is a worthless debate created by Brahmanical Deras. For more details check this video: https://www.youtube.com/watch?v=bJ9MY2Gs5wY&t=1655s

But good thing is that you have resolved to get out of it. It is this resolve along with your faith in Gurbani that will definitely bring results very soon.
My humble suggestion is that you should try to get involved in some physical activities in Gurdwara. Like participating in Sewa activities, joining Sikh groups, learning kirtan, etc. If possible read books on Gurbani or Sikh History. Do not limit yourself to merely reading Gurbani.
