This physical act of wavering fan was old custom done to kings in order to show respect.
Although it is not specified in explicit manner in any authentic rehatnama or contemporary records of Guru still let me simplify
The chaur is done on guru granth sahib in order to show respect to the wisdom it has.
Remember this thing isn’t related to spirituality
it is a physical act.
Now what does Gurmat says about real chaur you must be clear
ਤੇਰੋ ਕੀਆ ਤੁਝਹਿ ਕਿਆ ਅਰਪਉ ਨਾਮੁ ਤੇਰਾ ਤੁਹੀ ਚਵਰ ਢੋਲਾਰੇ ॥੩॥
tero keeaa tujheh kiaa arapau naam teraa tuhee chavar ddolaare ||3||
Why should I offer to You, that which You Yourself created? Your Name is the fan, which I wave over You. ||3||

Bani is very simple
real chaur is quite spiritual aspect
the physical things we do is as honour we give in this world.

Tradition of Chaur for the kings is very old. There are refences in Guru Granth Sahib.
ਕੇਸਾ ਕਾ ਕਰਿ ਚਵਰੁ ਢੁਲਾਵਾ ਚਰਣ ਧੂੜਿ ਮੁਖਿ ਲਾਈ ॥੧॥ ਰਹਾਉ – 749
Sevak is ready to use his hair for Chaur. Follow the teachings of the Guru.
Guru Granth Sahib is King of the Kings. Hence, we have to give full respect traditionally as well as follow the teachings from the core of the heart.
