As best as I know, covering of head is cultural behavior and made a part of the Sikhi practice.
In Punjabi culture, covering one’s head in presence of the respected ones is a sign of respect towards them. As Sikhs have highest respect for the Sri Guru Granth Sahib, the Sikhs make doubly sure that they cover their head as they enter the Divan Hall.
It is no different than bowing (MATHA TEAKNA) in front of Guru Sahib. In Punjabi culture bowing (MATHAA TEAKNA) is an expression of respect towards Guru Sahib or even the elders.
