You have written a Pangti ‘ਇਹੁ ਹਰਿ ਰਸੁ ਪਾਵੈ ਜਨੁ ਕੋਇ ॥ ਅੰਮ੍ਰਿਤੁ ਪੀਵੈ ਅਮਰੁ ਸੋ ਹੋਇ’ ਲਿੱਖ ਕੇ ਸਵਾਲ and have desired to know whether one can become immortal?
The undersigned had earlier also replied to your this question in Gurmukhi but now is writing in English.
The undersigned wants to bring to your kind notice that the word ‘ਅਮਰ’ (immortal) appears in Gurbani many times. The question is not of physical death, which is bound to come to all. The question here is of spiritual death.
We are now in the Shahidi week in which the four Sahibzadas of tenth Guru person Guru Gobind Singh Sahib and his mother laid down their lives in Chamkaur and Sirhind for not compromising on principles and by remaining steadfast on the righteous path. Though they died physical deaths but didn’t die spiritual death and became immortal for all times to come.
For your information some examples from Gurbani in which the word ‘ਅਮਰ’ appears and their meanings have been given below.
Guru Sahib is guiding us that those Sikhs/Persons who imbibe the teachings of Guru Granth Sahib, do Naam Simran, get rid of worldly desires as also ego and become Bhagats are dear to Akalpurakh because they don’t die spiritual deaths. So, immortality is nothing but not dying spiritual death.

ਪਦ ਅਰਥ: ਅਮਰੁ = {ਅ-ਮਰੁ} ਮੌਤ-ਰਹਿਤ, ਜਿਸ ਨੂੰ ਆਤਮਕ ਮੌਤ ਨਾਹ ਆਵੇ।

ਪਦ ਅਰਥ: ਅਮਰ = ਜਨਮ ਮਰਨ ਤੋਂ ਰਹਿਤ।
ਅਰਥ: ਕਰੋੜਾਂ ਬੰਦੇ ਪ੍ਰਭੂ-ਨਾਮ ਦਾ ਆਨੰਦ ਮਾਣਦੇ ਹਨ, ਉਹ ਜਨਮ ਮਰਨ ਤੋਂ ਰਹਿਤ ਹੋ ਕੇ ਸਦਾ ਹੀ ਜੀਊਂਦੇ ਰਹਿੰਦੇ ਹਨ।

ਅਰਥ: ਕੋਈ ਵਿਰਲਾ ਮਨੁੱਖ ਪ੍ਰਭੂ ਦੇ ਨਾਮ ਦਾ ਸੁਆਦ ਮਾਣਦਾ ਹੈ, (ਤੇ ਜੋ ਮਾਣਦਾ ਹੈ) ਉਹ ਨਾਮ-ਅੰਮ੍ਰਿਤ ਪੀਂਦਾ ਹੈ, ਤੇ ਅਮਰ ਹੋ ਜਾਂਦਾ ਹੈ।

ਪਦ ਅਰਥ: ਅਮਰਾ ਪਦੁ = ਸਦਾ ਕਾਇਮ ਰਹਿਣ ਵਾਲਾ ਦਰਜਾ।
ਹੇ ਨਾਨਕ! ਜਿਨ੍ਹਾਂ ਮਨੁੱਖਾਂ ਨੇ ਸਤਸੰਗ ਵਿਚ ਪ੍ਰਭੂ ਨੂੰ ਸਿਮਰਿਆ ਹੈ, ਉਹ ਜਨਮ ਮਰਨ ਤੋਂ ਰਹਿਤ ਹੋ ਜਾਂਦੇ ਹਨ, ਤੇ ਸਦਾ ਕਾਇਮ ਰਹਿਣ ਵਾਲਾ ਦਰਜਾ ਹਾਸਲ ਕਰ ਲੈਂਦੇ ਹਨ।

ਪਦ ਅਰਥ: ਮਰਨੋ ਮਰਨੁ = ਮੌਤ ਆ ਜਾਣੀ ਹੈ, ਮਰ ਜਾਣਾ ਹੈ। ਸਭੁ ਕੋਈ = ਹਰੇਕ ਜੀਵ। ਸਹਜੇ = ਸਹਜ ਅਵਸਥਾ ਵਿਚ, ਅਡੋਲਤਾ ਵਿਚ, ਥਿਰ-ਚਿੱਤ ਹੋ ਕੇ। ਮਰੈ = ਮਰਦਾ ਹੈ, ਮਾਇਆ ਵਲੋਂ ਮਰਦਾ ਹੈ, ਦੁਨੀਆ ਦੀਆਂ ਖ਼ਾਹਸ਼ਾਂ ਵਲੋਂ ਬੇਪਰਵਾਹ ਹੋ ਜਾਂਦਾ ਹੈ। ਅਮਰੁ = ਮਰਨ ਤੋਂ ਰਹਿਤ, ਸਦਾ ਜ਼ਿੰਦਾ। ਸੋਈ = ਉਹ ਮਨੁੱਖ।2।
(ਦੁਨੀਆ ਵਿਚ) ਹਰੇਕ ਜੀਵ ‘ਮੌਤ, ਮੌਤ’ ਆਖ ਰਿਹਾ ਹੈ (ਭਾਵ, ਹਰੇਕ ਜੀਵ ਮੌਤ ਤੋਂ ਘਾਬਰ ਰਿਹਾ ਹੈ) , (ਪਰ ਜੋ ਮਨੁੱਖ) ਅਡੋਲਤਾ ਵਿਚ (ਰਹਿ ਕੇ) ਦੁਨੀਆ ਦੀਆਂ ਖ਼ਾਹਸ਼ਾਂ ਤੋਂ ਬੇਪਰਵਾਹ ਹੋ ਜਾਂਦਾ ਹੈ ਉਹ ਅਮਰ ਹੋ ਜਾਂਦਾ ਹੈ (ਉਸ ਨੂੰ ਮੌਤ ਡਰਾ ਨਹੀਂ ਸਕਦੀ) ।2।

ਪਾਰਸਿ ਪਰਸਿਐ ਪਾਰਸੁ ਹੋਏ ਜਾ ਤੇਰੈ ਮਨਿ ਭਾਣੇ ॥ ਅਮਰਾ ਪਦੁ ਪਾਇਆ ਆਪੁ ਗਵਾਇਆ ਵਿਰਲਾ ਗਿਆਨ ਵੀਚਾਰੀ ॥ ਨਾਨਕ ਭਗਤ ਸੋਹਨਿ ਦਰਿ ਸਾਚੈ ਸਾਚੇ ਕੇ ਵਾਪਾਰੀ ॥੪॥ (ਪੰਨਾ 688)
ਪਦ ਅਰਥ: ਅਮਰਾ ਪਦੁ = ਉਹ ਆਤਮਕ ਅਵਸਥਾ ਜਿਥੇ ਆਤਮਕ ਮੌਤ ਨਹੀਂ ਪੋਂਹਦੀ। ਆਪੁ = ਆਪਾ = ਭਾਵ।
ਅਰਥ:ਹੇ ਪ੍ਰਭੂ! ਜਦੋਂ (ਭਗਤ ਜਨ) ਤੇਰੇ ਮਨ ਵਿਚ ਪਿਆਰੇ ਲੱਗਦੇ ਹਨ, ਤਾਂ ਉਹ ਗੁਰੂ-ਪਾਰਸ ਨਾਲ ਛੁਹ ਕੇ ਆਪ ਭੀ ਪਾਰਸ ਹੋ ਜਾਂਦੇ ਹਨ (ਹੋਰਨਾਂ ਨੂੰ ਪਵਿਤ੍ਰ ਜੀਵਨ ਦੇਣ ਜੋਗੇ ਹੋ ਜਾਂਦੇ ਹਨ) ।
ਜੇਹੜੇ ਬੰਦੇ ਆਪਾ-ਭਾਵ ਦੂਰ ਕਰਦੇ ਹਨ ਉਹਨਾਂ ਨੂੰ ਉਹ ਆਤਮਕ ਦਰਜਾ ਮਿਲ ਜਾਂਦਾ ਹੈ ਜਿਥੇ ਆਤਮਕ ਮੌਤ ਅਸਰ ਨਹੀਂ ਕਰ ਸਕਦੀ। ਪਰ ਅਜੇਹਾ ਕੋਈ ਵਿਰਲਾ ਹੀ ਗੁਰੂ ਦੇ ਦਿੱਤੇ ਗਿਆਨ ਦੀ ਵਿਚਾਰ ਕਰਨ ਵਾਲਾ ਬੰਦਾ ਹੁੰਦਾ ਹੈ।
ਹੇ ਨਾਨਕ! ਪਰਮਾਤਮਾ ਦੀ ਭਗਤੀ ਕਰਨ ਵਾਲੇ ਬੰਦੇ ਸਦਾ-ਥਿਰ ਪ੍ਰਭੂ ਦੇ ਦਰ ਤੇ ਸੋਭਾ ਪਾਂਦੇ ਹਨ, ਉਹ (ਆਪਣੇ ਸਾਰੇ ਜੀਵਨ ਵਿਚ) ਸਦਾ-ਥਿਰ ਪ੍ਰਭੂ ਦੇ ਨਾਮ ਦਾ ਹੀ ਵਣਜ ਕਰਦੇ ਹਨ।੪।

Anmolji let me give simple and short answer. GURU says physical death is certain to happen. ANIK JATAN KAR KAAL SANTAE MARAN LIKHAE MANDAL MAHE AAEE (SGGS PAGE 685). Those who are born shall die one day, nothing anybody can do about. GURU says there is another death you can do something about. AKHAN JEEWAN WISRE MAR JAO, the spiritual death. GURU says SHABAD MAROH PHIR JEEWAHO SAD HEE meaning when you become SACHIARA you do not face spiritual death. AMRIT SACHA NAAM HAI , drink this, internalize this you become AMAR, IMMORTAL SPIRITUALLY.

Immortality is generally linked with physical death, which has to happen and every one is afraid of this. The undersigned is quoting a stanza from a Shabad of Kabir ji at Panna 654 of Guru Granth Sahib in which he is guiding us to rise above the fright of death:-
ਪਰਿਓ ਕਾਲੁ ਸਭੈ ਜਗ ਊਪਰ ਮਾਹਿ ਲਿਖੇ ਭ੍ਰਮ ਗਿਆਨੀ ॥ ਕਹੁ ਕਬੀਰ ਜਨ ਭਏ ਖਾਲਸੇ ਪ੍ਰੇਮ ਭਗਤਿ ਜਿਹ ਜਾਨੀ ॥੪॥੩॥ {ਪੰਨਾ 654}
ਅਰਥ: ਸਾਰੇ ਜਗਤ ਉੱਤੇ ਕਾਲ ਦਾ ਸਹਿਮ ਪਿਆ ਹੋਇਆ ਹੈ, ਭਰਮੀ ਗਿਆਨੀ ਭੀ ਉਸੇ ਹੀ ਲੇਖੇ ਵਿਚ ਲਿਖੇ ਗਏ ਹਨ (ਉਹ ਭੀ ਮੌਤ ਦੇ ਸਹਿਮ ਵਿਚ ਹੀ ਹਨ) । ਹੇ ਕਬੀਰ! ਆਖ-ਜਿਨ੍ਹਾਂ ਮਨੁੱਖਾਂ ਨੇ ਪ੍ਰੇਮਾ-ਭਗਤੀ ਕਰਨੀ ਸਮਝ ਲਈ ਹੈ ਉਹ (ਮੌਤ ਦੇ ਸਹਿਮ ਤੋਂ) ਆਜ਼ਾਦ ਹੋ ਗਏ ਹਨ।੪।੩।
So, Sikh, who is a student, by imbibing the teachings of Guru Granth Sahib, has to rise above the fright of death and become Khalsa i.e. Akalpurakh’s own. Perhaps, you would be aware that Khalsa is a Persian word, which means King’s own land. Once the Sikh become Akalpurakh’s own then Akalpurakh will always be with him and he will not do anything which will lead to his Spiritual Death. So, as understood by the undersigned, this is what immortality is.
