The practice of using a Chaur Sahib (a ceremonial whisk) in Sikhism was initiated by Guru Angad Dev Ji, the second Sikh Guru. The Chaur Sahib is a symbol of respect and is waved over the Guru Granth Sahib, the holy scripture of Sikhism, as a sign of reverence and devotion. This tradition continues in Sikh Gurdwaras (places of worship) to this day, where volunteers wave the Chaur Sahib to honor the sacred scripture.

In response to your question about use of Chaur (Whisk) in Sikhism, the common sense of the undersigned guides that this practice of use of Chaur would have possibly started after compilation of Aad Granth (Pothi Sahib) by Fifth Guru Person, Guru Arjun Sahib and when it was established in Darbar Sahib. Another possibility can be that the practice of using Chaur would have started after the Tenth Guru Person, Guru Gobind Singh Sahib, ordained Guru Granth Sahib as ever living Guru of Sikhs.
As you would be aware that Chaur was used, as a matter of respect to the worldly kings, when they sat on their thrones. Since Guru Granth Sahib is considered as king of kings (ਸ਼ਾਹਨਸ਼ਾਹਾਂ ਦਾ ਸ਼ਾਹ, ਪਾਤਸ਼ਾਹਾਂ ਦਾ ਪਾਤਸ਼ਾਹ), the practice of using Chaur must have started, as a matter of respect.
As regards Gurbani, the word Chawar (ਚਵਰ) appears, in Guru Granth Sahib, eight times and all the relevant Tuks and their meanings are given below.
As you can observe that Gurbani guides about the air doing chawar in the famous Aarti of First Guru Person, Guru Nanak Sahib recited in Jagannath Puri temple, as against the Aarti being conducted by the Pujaris there.
Gurbani also teaches about Naam being Chawar and also about making of Chawar of Kesh (in utmost humility) to respect Akalpurakh. Gurbani also teaches about Chaur on the head of a person, who becomes one with Akalpurakh and his mind being king of kings.
As you can observe from the last Tuk, given below, that Bhatt ji (Harbans) is telling that Akalpurakh’s Chaur can be seen on the head of Fifth Guru Person, Guru Arjun Sahib.

ਅਰਥ: ਸਾਰਾ ਆਕਾਸ਼ (ਮਾਨੋ) ਥਾਲ ਹੈ। ਸੂਰਜ ਤੇ ਚੰਦ (ਉਸ ਥਾਲ ਵਿਚ) ਦੀਵੇ ਬਣੇ ਹੋਏ ਹਨ। ਤਾਰਿਆਂ ਦੇ ਸਮੂਹ, ਮਾਨੋ, (ਥਾਲ ਵਿਚ) ਮੋਤੀ ਰੱਖੇ ਹੋਏ ਹਨ। ਮਲਯ ਪਰਬਤ ਵਲੋਂ ਆਉਣ ਵਾਲੀ ਹਵਾ, ਮਾਨੋ, ਧੂਪ (ਧੁਖ ਰਿਹਾ) ਹੈ। ਹਵਾ ਚੌਰ ਕਰ ਰਹੀ ਹੈ। ਸਾਰੀ ਬਨਸਪਤੀ ਜੋਤਿ-ਰੂਪ (ਪ੍ਰਭੂ ਦੀ ਆਰਤੀ) ਵਾਸਤੇ ਫੁੱਲ ਦੇ ਰਹੀ ਹੈ।1।

ਅਰਥ: (ਹੇ ਪੰਡਿਤ!) ਉਸ (ਹਰਿ-ਸਾਲਗਿਰਾਮ ਦੀ ਰਜ਼ਾ) ਦਾ ਘੰਟਾ (ਸਿਰਫ਼ ਮੰਦਰ ਵਿਚ ਸੁਣੇ ਜਾਣ ਦੀ ਥਾਂ) ਸਾਰੇ ਜਗਤ ਵਿਚ ਹੀ ਸੁਣਿਆ ਜਾਂਦਾ ਹੈ। (ਸਾਧ ਸੰਗਤਿ-ਰੂਪ) ਬੈਕੁੰਠ ਵਿਚ ਉਸ ਦਾ ਨਿਵਾਸ ਸਦਾ ਹੀ ਟਿਕਿਆ ਰਹਿੰਦਾ ਹੈ, ਸਭ ਜੀਵਾਂ ਉਤੇ ਉਸ ਦਾ (ਪਵਣ) -ਚਵਰ ਝੁਲ ਰਿਹਾ ਹੈ, (ਸਾਰੀ ਬਨਸਪਤੀ) ਸਦਾ ਫੁੱਲ ਦੇ ਰਹੀ ਹੈ ਇਹੀ ਹੈ ਉਸ ਦੇ ਵਾਸਤੇ ਧੂਪ।2।

ਅਰਥ: ਤੇਰਾ ਨਾਮ ਮੈਂ ਧਾਗਾ ਬਣਾਇਆ ਹੈ, ਨਾਮ ਨੂੰ ਹੀ ਮੈਂ ਫੁੱਲ ਤੇ ਫੁੱਲਾਂ ਦੀ ਮਾਲਾ ਬਣਾਇਆ ਹੈ, ਹੋਰ ਸਾਰੀ ਬਨਸਪਤੀ (ਜਿਸ ਤੋਂ ਲੋਕ ਫੁੱਲ ਲੈ ਕੇ ਮੂਰਤੀਆਂ ਅੱਗੇ ਭੇਟ ਧਰਦੇ ਹਨ; ਤੇਰੇ ਨਾਮ ਦੇ ਟਾਕਰੇ ਤੇ) ਜੂਠੀ ਹੈ। (ਇਹ ਸਾਰੀ ਕੁਦਰਤ ਤਾਂ ਤੇਰੀ ਬਣਾਈ ਹੋਈ ਹੈ) ਤੇਰੀ ਪੈਦਾ ਕੀਤੀ ਹੋਈ ਵਿਚੋਂ ਮੈਂ ਤੇਰੇ ਅੱਗੇ ਕੀਹ ਰੱਖਾਂ? (ਸੋ,) ਮੈਂ ਤੇਰਾ ਨਾਮ-ਰੂਪ ਚੌਰ ਹੀ ਤੇਰੇ ਉਤੇ ਝਲਾਉਂਦਾ ਹਾਂ।੩।

ਅਰਥ: ਹੇ ਮੇਰੇ ਰਾਮ! ਜੇ ਤੇਰੀ ਮੇਹਰ ਹੋਵੇ, ਤਾਂ) ਮੈਂ ਤੇਰੇ ਸੇਵਕਾਂ ਤੋਂ ਸਦਕੇ ਜਾਵਾਂ (ਆਪਣਾ ਸਭ ਕੁਝ ਵਾਰ ਦਿਆਂ) , ਮੈਂ ਆਪਣੇ ਕੇਸਾਂ ਦਾ ਚੌਰ ਬਣਾ ਕੇ ਉਹਨਾਂ ਉਤੇ ਝੁਲਾਵਾਂ, ਮੈਂ ਉਹਨਾਂ ਦੇ ਚਰਨਾਂ ਦੀ ਧੂੜ ਲੈ ਕੇ ਆਪਣੇ ਮੱਥੇ ਉਤੇ ਲਾਵਾਂ।੧।ਰਹਾਉ।

ਅਰਥ: ਆਪਣੇ ਇਸ ਸਰੀਰ-ਰੂਪ ਸ਼ਹਿਰ ਦੀ ਰਾਖੀ ਕਰਨ ਲਈ ਮੇਰਾ ਫ਼ਰਜ਼ ਇਹ ਹੈ ਕਿ ਮੈਂ ਭਲੇ ਗੁਣਾਂ ਨੂੰ ਜੀ-ਆਇਆਂ ਆਖਾਂ ਤੇ ਵਿਕਾਰਾਂ ਨੂੰ ਮਾਰ ਕੱਢਾਂ, ਦਿਨ ਰਾਤ, ਹੇ ਪ੍ਰਭੂ! ਤੇਰੇ ਚਰਨ ਪਰਸਾਂ ਅਤੇ ਆਪਣੇ ਕੇਸਾਂ ਦਾ ਚੌਰ ਤੇਰੇ ਉੱਤੇ ਝੁਲਾਵਾਂ।1।

ਮਸਤਕਿ ਪਦਮੁ ਦੁਆਲੈ ਮਣੀ ॥ ਮਾਹਿ ਨਿਰੰਜਨੁ ਤ੍ਰਿਭਵਣ ਧਣੀ ॥ ਪੰਚ ਸਬਦ ਨਿਰਮਾਇਲ ਬਾਜੇ ॥ ਢੁਲਕੇ ਚਵਰ ਸੰਖ ਘਨ ਗਾਜੇ ॥ ਦਲਿ ਮਲਿ ਦੈਤਹੁ ਗੁਰਮੁਖਿ ਗਿਆਨੁ ॥ ਬੇਣੀ ਜਾਚੈ ਤੇਰਾ ਨਾਮੁ ॥੯॥੧॥ {ਪੰਨਾ 974}
ਅਰਥ: ਉਸ ਬੰਦੇ ਦੇ ਧੁਰ ਅੰਦਰ ਤ੍ਰਿਲੋਕੀ ਦਾ ਮਾਲਕ ਪ੍ਰਭੂ ਆ ਟਿਕਦਾ ਹੈ। (ਉਸ ਦੀ ਬਰਕਤਿ ਨਾਲ) ਉਸ ਦੇ ਮੱਥੇ ਉੱਤੇ (ਮਾਨੋ) ਕਉਲ ਫੁੱਲ (ਖਿੜ ਪੈਂਦਾ ਹੈ, ਤੇ) ਉਸ ਫੁੱਲ ਦੇ ਚਾਰ ਚੁਫੇਰੇ ਹੀਰੇ (ਪਰੋਤੇ ਜਾਂਦੇ ਹਨ) ; (ਉਸ ਦੇ ਅੰਦਰ ਮਾਨੋ ਇਕ ਐਸਾ ਸੁੰਦਰ ਰਾਗ ਹੁੰਦਾ ਹੈ ਕਿ (ਪੰਜੇ ਹੀ ਕਿਸਮਾਂ ਦੇ ਸੋਹਣੇ ਸਾਜ ਵੱਜ ਪੈਂਦੇ ਹਨ, ਬੜੇ ਸੰਖ ਵੱਜਣ ਲੱਗ ਪੈਂਦੇ ਹਨ, ਉਸ ਉਤੇ ਚੌਰ ਝੁੱਲ ਪੈਂਦਾ ਹੈ (ਭਾਵ, ਉਸ ਦਾ ਮਨ ਸ਼ਾਹਨਸ਼ਾਹਾਂ ਦਾ ਸ਼ਾਹ ਬਣ ਜਾਂਦਾ ਹੈ) । ਸਤਿਗੁਰੂ ਤੋਂ ਮਿਲਿਆ ਹੋਇਆ ਪ੍ਰਭੂ ਦੇ ਨਾਮ ਦਾ ਇਹ ਚਾਨਣ ਕਾਮਾਦਿਕ ਵਿਕਾਰਾਂ ਨੂੰ ਮਾਰ ਮੁਕਾਂਦਾ ਹੈ।
ਹੇ ਪ੍ਰਭੂ! (ਤੇਰਾ ਦਾਸ) ਬੇਣੀ (ਭੀ ਤੇਰੇ ਦਰ ਤੋਂ) (ਇਹ) ਨਾਮ ਹੀ ਮੰਗਦਾ ਹੈ।9।1।

ਅਜੈ ਚਵਰੁ ਸਿਰਿ ਢੁਲੈ ਨਾਮੁ ਅੰਮ੍ਰਿਤੁ ਮੁਖਿ ਲੀਅਉ ॥ ਗੁਰ ਅਰਜੁਨ ਸਿਰਿ ਛਤ੍ਰੁ ਆਪਿ ਪਰਮੇਸਰਿ ਦੀਅਉ ॥ {ਪੰਨਾ 1409}
ਅਰਥ: (ਆਪ ਦੇ) ਸਿਰ ਤੇ ਰੱਬੀ ਚਉਰ ਝੁੱਲ ਰਿਹਾ ਹੈ, ਆਪ ਨੇ ਆਤਮਕ ਜੀਵਣ ਦੇਣ ਵਾਲਾ ਨਾਮ ਮੂੰਹੋਂ (ਸਦਾ) ਉਚਾਰਿਆ ਹੈ। ਗੁਰੂ ਅਰਜੁਨ ਦੇਵ ਜੀ ਦੇ ਸਿਰ ਤੇ ਇਹ ਛਤਰ ਪਰਮੇਸੁਰ ਨੇ ਆਪ ਬਖ਼ਸ਼ਿਆ ਹੈ।
