Thank you for asking a very important question regarding Panj Piyaray.
There is no mention of the Panj Piyaray in Sri Guru Granth Sahib.
The tradition started with Guru Gobind Singh Ji holding a Divan on Vaisakhi day in 1699.
On this day Guru Gobind Singh ji initiated Panj Piyaray into Khalsa Panth by administering them the Khanday Di Pahul. And then Guru Gobind Singh Ji himself took Khanday Di Pahul from these Panj Piyaray.
This started the tradition of five Sikhs who have taken Khanday Di Pahul to represent the view of the Guru. That is the reason the importance of the Panj Singhs.
Please note the true Panj Piayaray were the original five Sikhs who were initiated by Sri Guru Gobind Singh Ji. All the rest are not among the Panj Piyaray, even though some people mistakenly call them Panj Piyaray.

Sir, I believe Guru Gobind Singh had transferred the decision-making power of Panthic matters to Panj pyare by becoming chela and taking Amrit from them. There is at least one piece of evidence from history where Guru Gobind Singh ji has to change his course of action upon request of 5 pyaare. I think that was at Chamkaur di Garhi.
Secondly, 5 takhts were made for them. 5 pyare are supposed to station at 5 takhts.
