Sahib is Persian word. It is a designation for an authority.
In Gurbani, it is also used to refer to the All mighty.
ਜਿਸ ਦਾ ਸਾਹਿਬੁ ਡਾਢਾ ਹੋਇ ॥
ਤਿਸ ਨੋ ਮਾਰਿ ਨ ਸਾਕੈ ਕੋਇ ॥(ਮ:੩, ਪੰ:੮੪੨)
Sahib is also used as a respectful designation with Guru Jis. e.g. Guru Gobind Singh Ji Sahib. etc.

Sahib word is used for Akal Purkh is Guru Granth Sahib.
Word Ji is normally used for common people. Hence, as a respect, Sahib word is being used for the Guru’s.
