What happens to our soul when we die? Does It leaves the body at the same time of our last breath? What happens after that?

Great question Sukhpreet Kaur Ji
Sikhi does not believe in reincarnation after physical death. We do believe in Karma. What we sow so shall we reap in this life
Lets read this shabd on page 885 of Satguru Arjan Dev JI, Please read this entire Shabd. Here are a few lines :
Pawnei meh pawn smaia II Joyoti meh jyot ral jaia II Maati maati hoee ek II ……….
Koun mooaa re koun mooaa II Brahm giani mil kroh becharaa eh to chalat bhaia II
Agli kish khabr na Paaee II ……. Na koee mreh na Avai Jaaia II
When we die, breath (air) mix with air. Joyoti (life force/ Soul) mix with Parmjoyot. The dead body mix with elements, mother earth or fire after cremation. We go back where we came from. Life Force is an Energy, and we know that energy never destroys but can change it’s form. No one dies and no one comes and goes. Nobody has come back to tell us!
Here is more information on this subject.Reincarnation Is Belief That Is Based On Assumption Not fact.
We now live in 21ist century scientific age. I believe that any religious teachings should be based on logic, reason, facts and should have relevance to our daily life. In modern day life, a religion that is at odds with science both dishonors God and loses relevance. Gurbani teaches us to realize (JIWAN MUKTI) salvation here and now, not look to an external deity to grant salvation after death.
God in Gurbani is SHABAD GURU, BANI GURU, divine wisdom, intellect. God is a treasure of virtues and not an external deity. God lives within every human as divine energy. When we understand this, we understand that we achieve MUKTI by gaining spiritual awakening, realizing the meaning and purpose of life, finding who we are, being pleasant and spreading pleasantness all around. We realize God within here and now, not after death. Gurbani therefore completely rejects any life after death belief systems. We all come from formless universal divine consciousness, a universal life energy that never dies. NANAK SIJH EWEHA WAAR BAHUR NA HOWEE JANMARA meaning this is the only life we have.
In Gurbani reincarnation (AWAGAWAN) is discussed in the context of spiritual or conscious death. We die a spiritual death, or a death of our God consciousness, each time that we separate from God within. We live many lives here and now through animalistic behaviours (KARTOOT PASHOO KI MANAS JAAT). Guru Arjun Sahib on page 1357 in one slok says those who are egoistic and are ignorance of truth, divine wisdom are living meaningless, purposeless life here and now. They are living life (JUN) of dog, pig, donkey, crow and snake by behaviour and actions in daily life. Through such behaviours, we ‘reincarnate’ into many lives, here and now, that reflect the characteristics of different animals. Gurbani says AWAGAWAN HOT HAI PHUN PHUN EH PARSANG NA TOOTAI, meaning through our wicked actions, ego, ignorance of truth, living life full of KAAM, KRODH, LOBH, MOH we experience reincarnation every day here and now.
It is a serious mistake to literally interpret following shabads as proof of reincarnation. JANAM JANAM KI ISS MANN KO MALL LAGI, KAEE JANAM BICHHRE SE MADHO, and many other such shabad. Gurbani talks about conscious death, reincarnation here and now every day. It is foolish to believe that we may be reborn as animals in next life when we are living that life here and now. Why not fix what we have here and now by living in the present.
I believe that in 21ist century with so much scientific knowledge life after death belief systems are tools created by organized religions for exploitation of congregations. These belief systems have no logical, reasoned and factual basis and are an insult to human intelligence.

The Gurus clearly teached the idea that our souls get reincarnated after death. Its repeated over and over in Gurbani. You just accused the Gurus of exploiting people and insulting human intelligence.
I disagree with the given answers because Gurbani believes in Jyoti ma Jyot smaya.
it means a lot of souls are not got Mukti
Those exist in this world in any form
The man gets this life to get salvation.
In Gurbani, there are so many references
when we think logically then we think with the philosophy of Buddhism.
