The meaning of Sahib has come in Gurbani only and only for Akal Purakh.
ਸਾਹਿਬੁ ਮੇਰਾ ਏਕੋ ਹੈ।।
ਏਕੋ ਹੈ ਭਾਈ ਏਕੋ ਹੈ।।(350)
That means Akal Purakh is the only one and omnipresent. There is no one else like Akal Purakh.
ਸਾਚੇ ਸਾਹਿਬਾ ਕਿਆ ਨਾਹੀ ਘਰਿ ਤੇਰੈ।।(917)
Meaning my everlasting Parmatamm, I always ask for your help because you are the only owner of all the graces.

ਸਾਹਿਬ ਦਾ ਅਰਥ ਗੁਰਬਾਣੀ ਵਿੱਚ ਸਿਰਫ ਤੇ ਸਿਰਫ ਅਕਾਲ ਪੁਰਖ ਲਈ ਆਇਆ ਹੈ।
ਸਾਹਿਬੁ ਮੇਰਾ ਏਕੋ ਹੈ।।
ਏਕੋ ਹੈ ਭਾਈ ਏਕੋ ਹੈ।।(350)
ਭਾਵ ਕਿ ਸਿਰਫ ਉਹ ਇਕੋ ਹੀ ਮਾਲਕ ਹੈ। ਉਸ ਵਰਗਾ ਹੋਰ ਕੋਈ ਵੀ ਨਹੀਂ ਹੈ।
ਸਾਚੇ ਸਾਹਿਬਾ ਕਿਆ ਨਾਹੀ ਘਰਿ ਤੇਰੈ।।(917)
ਭਾਵ ਕਿ ਮੇਰੇ ਸਦਾ ਕਾਇਮ ਰਹਿਣ ਵਾਲੇ ਪ੍ਰਮਾਤਮਾ, ਮੈ ਤਾਂ ਸਦਾ ਤੇਰੇ ਕੈਲੋ ਹੀ ਮੰਗਦਾ ਹਾ ਕਿਉਂਕਿ ਤੂੰ ਹੀ ਤਾਂ ਸਾਰੀਆਂ ਰਹਿਮਤਾਂ ਦਾ ਇਕੋ ਇਕ ਮਾਲਕ ਹੈ।

Sahib word has been used in Guru Granth Sahib for Akal Purkh only.
However, as a respect and distinction from others we can use Sahib for the Guru Sahibs.
