The choice of selecting the meat is same as for any other vegetable. One has to see whether it is fresh and suitable to eat for the body. All these confusions have been taken from other religions. Eating of meat has nothing to do with the religion.Purpose is to become Sachyaar and not ritual Path or Pooja. There is no question of being vegetarian or non vegetarian. Gurmat does not put any such restrictions. Hence, all the Guru Sahibs might be eating both type of food, without any confusion or restrictions. Please go through the following article for details.
The Shabad quoted by you have been discussed in the following article along with other Shabad

It is advised that we should not kill animals for our food. No ambiguity. However, meat is taken out of the debate of Paap Punya because there may be situations when there is no alternative available. In human evolution history, meat was the only food at several places several centuries ago. Animals also eat other animals as good. But today, when the choice is available eating meat is not advised.
According to Guru Granth Sahib, there are no eating restrictions prescribed as a spiritual rule. SGGS does not command what one should eat or avoid, nor does it associate spiritual purity with vegetarianism or impurity with meat.
Instead, it clearly rejects the idea that diet can lead to inner transformation. By stating that all food contains life and that the Divine is present everywhere, the text removes the basis for food-based purity distinctions. Its consistent message is that changing what one eats does not change ego, greed, fear, or falsehood.
What truly matters is how one lives. Honest earning, truthful speech, compassion, humility, and awareness of the One are emphasized as the foundations of spiritual life.
SGGS avoids food laws because such rules create division and superiority while allowing people to ignore inner ethical responsibility. Spiritual clarity, according to the text, comes from conscience and understanding, not from controlling the plate.
Both plants and animals are made of cells. A cell is the basic unit of life. All cells are made of the same 4 biomolecules called the molecules of life. It does not matter if we eat plants or animals. The purpose of food is to provide nutrition, and it has nothing to do with spirituality.
