We bow before Guru Granth Sahib for lowering our ego and committing to follow the teachings of Gurbani written in Guru Granth Sahib. Guru Granth Sahib teaches us that there is no use of bowing, if we are not following the teachings of Gurbani and are just doing the rituals only.
Nishan Sahib is meant for communicating the public that there is a place where one can come for physical and mental guidance and help. Bowing before any other things like Nishan Sahib is of no use.
Gurbani does not advise for any such physical practices of bowing before any physical materials or person.
Purpose is to understand the Hukam of the Akal Purkh and try to become Sachyaar (Truthful) person with the help of Gurbani written in Guru Granth Sahib.
No where it is mentioned in Guru Granth Sahib that one has to touch the feet of elders.
The most important is to follow the teachings of the Guru. All the other formalities are secondary.

      Respected Inderjit Chahal ji,
Waheguru ji ka Khalsa, Waheguru ji ki Fateh!

Your question has already been answered in detail by learned brother Dr. Sarabjit Singh ji. The undersigned just wants to add that Guru Sahib has not subscribed to bowing to pray to Akalpurakh. Please be kind to read the following two Pangtis of a Shabad of Bhagat Kabir ji and their meanings:-

We, the Sikhs, bow before Guru Granth Sahib to convey that Guru Sahib we have no wisdom. Hey Akalpurakh and Shabad Guru (Both are embodiment of each other) please take away our Manmat (ਮਨਮਤ) and give us Gurmat (ਗੁਰਮਤ) and transform our lives so that instead of becoming Manmukhs (ਮਨਮੁਖ), we become Gurmukhs (ਗੁਰਮੁਖ).

Hope it helps. If you have any further questions, please do ask. If you find any deficiencies, please point out the same, for improvement in future.

      Regards,
      Your Brother
