Your question implies that you are already aware that there are multiple languages and multiple dialect used in Guru Granth Sahib. The language that is most used is Punjabi of the times of Guru Sahibs. Please note that languages change with time. Punjabi of the 15th through seventeenth century was a bit different than Punjabi of today, that is the reason for us needing TEEKA (translations) of Gurbani.
