Why is Chaur sahib used in Sikhism?
There is a such refence in Gurbani enshrined in Guru Granth Sahib:
One or more attendants do Chaur for the highly respected authority. For Sikh, the highest respected visible authority is Sri Guru Granth Sahib ji, therefore, object of respect.
The reference is with respect to doing ARTI of the ੴ.
(The wind from Malay mountain is representing the fragrance, the wind is doing the Chaur, the entire vegetation is representing the flowers)
Please forgive me for conversion of Gurbani Thick font to Unicode is messing up a little.
